We love pancakes in our house, they are most definitely not reserved for pancake day! We wanted to share our favourite, tried and tested family recipe for light and fluffy American style pancakes. It's a really easy pancake recipe which we come back to over and over again for breakfast, as a dessert or special treat and of course on pancake day. We think it's the best pancake recipe and the possibilities to make them your own are almost endless!
A few years ago we accidentally created a little tradition of having pancakes for breakfast every Sunday morning. We're often awoken to the sound of one of our three children stood next to our bed on a Sunday asking if we can have pancakes for breakfast. Someone always sets the table and gets out all the available toppings and there is always a debate about who is having the first pancake. We're not just making pancakes, we're making a little memories too and it's something the whole family can enjoy together.
To make 12-15 mini fluffy pancakes you'll need:
- 1 cup of self raising flour
- 1 cup of milk
- 1 egg
- a pinch of salt
- a few drops of vanilla essence
Double the ingredients - known as a 'double batch' in our house for more pancakes!
Method:
- Mix all your ingredients together well for a few minutes until completely mixed, we use an electric mixer.
- Heat your pan, to get the rise in your pancakes you need a hot pan. Add a small dollop of butter to the pan and once melted wipe away some of the excess with a bit of kitchen roll.
- Pour in your batter. We make one pancake at a time as they cook really quickly and aim for around 10cm in diameter.
- Once you see little air bubbles appear it's time to flip your pancake over with a spatula and cook for a few more seconds on the other side
- Serve with your favourite toppings (there's some ideas below) and enjoy!
Our favourite toppings:
- Blueberries, strawberries and raspberries with maple syrup
- Cinnamon sugar (you can make your own by mixing caster sugar with some cinnamon
- Lemon and sugar
- Biscoff spread
- Nutella - chopped banana would work well with this too
- Ice cream
- Whipped cream
- Caramel or chocolate sauce
- Sprinkles and marshmallows
